EVO Salisbury Grand Opening


SALISBURY, Md. - One month until the big, and time is of the essence for Evolution Craft Brewing Company. In February, they will open the doors to the old Reddy Ice factory in Salisbury, and unveil their new brewery fully equipped for tours, a tasting room and an upscale restaurant and bar.
"Now we've got most of the rough end stuff down, the in-ground plumbing, and the trenching drains for the brewery. We're wiring up all the stuff, get out inspection then we'll start getting out drywall in the next few days," said owner, Tom Knorr.
Knorr says the holidays were a bit of a challenge, but are back on track. Since WMDT's last visit, they have made headway in the restaurant portion of the facility. They have created the framework for the long bar, which is expected to seat about 20 people, giving off a loud, energetic vibe, which leads right to the kitchen which will be partially open for restaurant-goers.
"We're doing fresh ground burgers here, we're doing our own sausages here, we're going to be using as lot of local fish for fish and chips, mostly upscale kind of pub fare," he said.
With all that extra space, Knorr says they can play around with different styles and flavors of beer. They expect to have a variety of malts and barrel aged brew.
"It's pretty special to be there at the site, see us making the beer, and then also experiencing awesome food with it," said the owner.
Right now the restaurant is set to open on February 15th, and the brewery in early March. If weather permits, officials say it should all go as planned. We will continue to update you on their progress
